Chicken breasts are a weeknight savior and a meal prep lover’s best friend. That’s why you’ll always find a stash in my freezer! But before you go shopping, there’s a few things to keep in mind when it comes to selection and storing.

  • Keep your eyes peeled for pink hued chicken. When shopping for chicken, the breasts should be a pink, flesh color. If there’s any signs of dullness or even gray coloring – avoid those at all costs as those are not fresh!
  • Grab frozen chicken breasts. There is nothing wrong with grabbing frozen chicken in bulk. In fact, you’ll often save a bunch of money!
  • Freeze chicken breasts in bags. If you’re freezing fresh chicken breasts, make sure to store them properly in freezer-safe bags by pushing out as much air as possible before zipping the bag up. If you prefer to freeze the chicken in its original package, the USDA advises that you wrap it in plastic wrap or freezer paper. This will help to prevent freezer burn.
  • Don’t wash your chicken. To avoid the risk of contamination, don’t rinse your chicken! Once the faucet water hits your chicken, it can easily splash onto various surface areas of your kitchen.

Description

Ingredients 
 

  • 2 chicken breasts, boneless and skinless
  • 5 cups spinach
  • 4 mandarins, peeled and separated
  • 1 avocado, ripe and diced
  • 1 cucumber, sliced
  • 2 green onions, chopped
  • slivered almonds
  • black and white sesame seeds

Lemon Vinaigrette:

Instructions 

  • Mix the vinaigrette ingredients together and pour 3/4 of it into a container, along with the chicken to marinate. Ideally, you should marinate the chicken overnight but a few hours is fine as well.

  • Preheat your oven to 425F and add the marinated chicken breasts to a baking dish. Bake for 20-25 minutes until cooked through.

  • Shred the chicken using either a fork or a stand mixer. Then in a large mixing bowl, toss all the ingredients together. Drizzle the remaining lemon vinaigrette on top.

  2. I loved this recipe. I don’t know if I read the recipe wrong, but I added ALL of the salt, cracked pepper and garlic powder mixture to season the raw chicken. Needless to say, the chicken was salty, but I just didn’t add any salt to the sauce and it was perfect!!5 stars

I followed your suggestion of prepping for the week and so far so good. I made your delicious hummus recipe and even cut celery and carrots in water and had it in my fridge. So today when I arrived home ravished with hunger instead of going to the bag of chips I had the hummus. My husband even liked it! Then I had some salmon that I had made for the week as well as a salad drizzled with your recommended lemon vinaigrette. Again, the food was so good.
