Maintaining a healthy lifestyle while juggling many assignment is not easy, but recipes like this Zucchini lasagna make it very easy and enjoyable. I love making it on Sundays and eating throughout the first half of the week. It’s comforting to know that once I arrive home I can enjoy a hot meal that brings me back to my childhood but in a healthier way. For the first time ever I made my family this recipe to say goodbye bf school and safe to say they enjoyed it just as much as I do every time I cook it. It makes me very happy to say that from now on, we’ll have this lasagna together in the distance every Monday. Food and Downshiftology certainly has brought us even closer ;)5 stars

I am gluten intolerant and have never liked lasagna. Zuchini lasagna is such an unexpected treat.

We used 1 lb. of beef and 1 lb of italian sausage, which I though gave it wonderful flavor. We an’t wait to try more of your recipes! Thank you.5 stars
