This was just delicious. I grow Japanese cucumbers and they have been prolific. I found seasoned rice vinegar to be a perfect blend of sweet/salty/sour but not as sharply sour as some other vinegars. We love it with that and/or mixed with mayonnaise and the onions. I occasionally chop fresh jalapeños into it when I’m feely “spicy”. Thanks for this wonderful riffable recipe.
