I prepared it for lunch today during a hurricane in Florida. I happen to have all the ingredients on hand except the mint so I substituted fresh basil. It did not disappoint! So refreshing. I made it anyway. I used crumbled feta instead of cubed, but everything else was as instructed. And sure enough, they all LOVED it. This is a light, refreshing, fun salad that I’m sure would be well received by most. Some people don’t care for feta, so it’s no problem keeping it separate and letting people add it if desired. Another winner. Thank you!!5 stars
