Sweet potatoes have always been one of my favorite vegetables to cook with. If you haven’t fallen in love with sweet potatoes yet, let me tell you why you should.

With so many sweet potato recipes to choose from, you certainly can't go wrong with a basic (but not boring) baked sweet potato. It's an easy and healthy side dish recipe. Watch how I make it in the video below!

Ingredients 
 

  • 4 sweet potatoes
  • salt and pepper, to taste
  • butter or ghee, optional

Instructions 

  • Prep the potatoes. Preheat your oven to 400°F and poke 4 to 5 holes in each sweet potato with a fork or sharp knife.
  • Bake the potatoes. Place the sweet potatoes on a baking sheet and bake in the oven for approximately 60 minutes, or until soft. Then top with butter or ghee and sprinkle with salt and pepper.
