  1. I had some leftovers pomegranate seeds from the holidays and was trying to come up with an easy way to use them. This was the perfect recipe. The flavor combination of almonds and pomegranates pair perfectly with the creamy chia pudding. I’m glad I gave it a try…and now have a new breakfast option I love.5 stars

  2. Delicious! I’ve been enjoying this for breakfast all week. It’s a healthy tasty way to help meet my nutritional goals. 💕 Thanks again for yet another wonderful recipe!

  3. FYI- a triple batch of chia seed pudding perfectly fills a quart wide mouth mason jar.

Thanks for the inspiration for a new make ahead breakfast for myself and my family! I love your blog so! I can’t get pomegranate seeds for this batch, but have several homemade jams (many without sugar) that will certainly work. One “jam” we love around here is dried apricots cooked with lemon juice and a little water until soft, then puréed until it makes a smooth spread. You can do the same with many dried fruits, it’s especially nice when you need a fruit spread in a pinch. 5 stars
