Two Reasons You’ll Love This Breakfast Recipe
I’m always looking for healthy breakfast ideas that are quick and easy to whip up – and this breakfast banana split is one such recipe! It takes the approach of a classic dessert-style banana split but swaps up the ingredients to be breakfast appropriate. Here’s why you’ll love it:
- It’s simple and healthy. It doesn’t get much easier than wholesome fruit, yogurt, and nuts (or granola). There’s no cooking involved and it’s really versatile with whatever seasonal fruit you have on hand.
- It’s quite pretty. I love to serve this up when I have guests over, as it plates beautifully. And that makes it a wonderful, simple breakfast for holidays, and especially Mother’s Day. But it’s also simple enough that you can enjoy a stunning breakfast all by yourself on the regular.
Breakfast Banana Split Ingredients
- Banana: Make sure to grab one that’s perfectly ripe. You don’t want one overly ripe and soft, as it will be harder to slice lengthwise and stay together.
- Yogurt: I’m using Greek yogurt, but you can use your favorite flavored or styled yogurt for variety. You could even use dairy-free!
- Berries: I often enjoy this recipe in summer when berries are fresh and in-season, but you could also use mandarin slices in the fall or winter.
- Crunchy Topping: Again, you can choose from a wide variety of nuts, seeds, or granolas. I love to use my chai spiced granola and don’t forget about my honey oat granola or maple almond granola in my cookbook!
How to Make a Breakfast Banana Split
- Slice the banana in half. Grab a sharp knife and slice the banana in half lengthwise, then place it on a plate.
- Add your toppings. Top the banana with a few dollops of yogurt, a handful of berries, and a sprinkle of nuts. If you want to be a little extra, you can drizzle some honey, maple syrup or almond butter on top. It’s really that simple!

- ½ cup berries (strawberries, raspberries, blackberries, and blueberries)
- 2 tablespoons sliced almonds, chopped nuts, or granola
