Buckwheat waffles are made from buckwheat flour and several different seeds. They’re gluten-free, vegan, healthy and amazingly delicious. A great way to switch up your breakfast routine.

Buckwheat Waffles

I can’t believe that this time last year instead of wandering vibrant, hilly streets of downtown Lisbon I was hopping on my motorbike to explore the hidden, glistening beaches of the Bukit Peninsula in Bali. Postcard-perfect beaches with world-famous surf breaks (and hardly a tourist in sight!).

Please, someone tell me how does a year fly by so quickly?! I mention in Roaming Free how sights, smells and taste greatly impact our memories of travel…and with Portugal it’s all about fresh seafood. But when I was in Uluwatu, on the Bukit Penninsula, one of the best meals I had was in a cozy, surfer-vibe cafe called Land’s End. The name? Oh, quite fitting if you look on a map.

So in the middle of nowhere, I find this cafe serving up nourishing, organic, healthy food (think: fresh juices, fruit salads, pitaya smoothie bowls, etc). And I know for sure I’ve hit the jackpot. But one item on the menu caught my attention. A gluten-free super waffle!

Buckwheat Waffle Ingredients

Made from only ground seeds, buckwheat flour and coconut water, the super waffle was hearty, filling and energizing. I don’t think I even ate lunch that day because it was sooo filling (which is why the surfers all love it!). The original was served up with with fresh fruit and a little Javanese honey on the side (here’s my Instagram pic).

So when All Clad sent me their classic waffle maker the first waffle that popped in my mind that I knew I had to make was the super waffle. My version is a combination of buckwheat flour, sunflower seeds, pumpkin seeds and flaxseed. Gluten-free goodness. It’s dairy-free as the only liquids are coconut water and coconut oil and yes, shockingly, it’s nut-free as it’s just seeds my friends.

Mix the ingredients all together, ladle it into a classic waffle maker (*note – I’m not sure how this recipe would work with a Belgian waffle maker) and you’ve got a delicious and nutritious breakfast. Don’t forget to serve these buckwheat waffles with tons of fresh fruit…Bali-style. Enjoy!

Description

These healthy, gluten-free buckwheat waffles are made from buckwheat flour and several different seeds. They're also vegan and nut-free.

Ingredients 
 

Instructions 

  • Place the sunflower seeds and pumpkin seeds in a food processor and pulse until finely ground into a flour. Transfer the seed flour to a bowl and add the buckwheat flour, ground flax seeds, coconut sugar, baking soda and salt. Whisk all dry ingredients together.
  • Add the coconut oil and coconut water and whisk into a batter.
  • Heat a waffle maker and pour a ladle-full of batter onto the waffle plates. Cook until golden.
  • Serve with sliced banana, strawberries and maple syrup.

  1. I only have a Belgian waffle maker, since some time has passed since the post is it still possible? If so, what would I change?

  2. Didn’t have coconut water so used half coconut milk/half water, also doubled the coconut sugar.  Ground my own own buckwheat flour. It all turned out great!

    Probably the extra sweetness compensated for the stronger flavour of grinding my own own flour. 

    How should I store these? I’m the fridge or counter or freezing?

    1. You can keep this in the fridge for about 5 days, or you could store them in the freezer for up to 3 months!

  3. If I wanted to omit the sunflower seeds would I just replace them with the same amount of pumpkin seed flour?

  4. The taste is perfect…but pls provide guidance on waffle iron cooking because mine would not release from sticking to both sides of the waffle iron. I tried without greasing and with greasing the waffle iron, but to no avail. Also, how high shd the waffle iron heat be set? I wound up making them into pancakes, but would very much appreciate your feedback in order to make them as waffles.

  5. Make sure you use storebought buckwheat flour and don’t try to just use buckwheat you ground yourself – makes for untasty and sticky waffles!

  10. I can confirm that these work well as pancakes too… having made up the batter this morning, i turned on my waffle maker to discover it had broken :( So fried these up in a bit of coconut oil and they came out perfectly. Thanks for the recipe!
